Tom Yam Pak

Spicy Thai soup Inspired by the version at Chao Phraya in Vancouver.


Ingredients:

Prepare the baked tofu cubelets according to the recipe.

Meanwhile, sauté onion, garlic, chilis, ginger and lemon grass in oil until onion is cooked through. Add vegetable stock and tomatoes and simmer 10 minutes.

Add mushrooms and carrots and simmer until carrots are just tender. Add snap/snow peas, cilantro and tofu and continue to simmer until peas are just tender.

Remove from heat and serve. You may remove and discard the lemon grass and ginger now or it can be removed while eating.
