Thyme for Carrots

Yes, yes, I apologise for the pun, but i'm sick of calling things by really boring names.

I've made this in various forms for ages, but this is probably the best so far.


Ingredients:


Thinly slice the tofu and all the vegetables. Heat the oil in a large skillet over high heat. Add the onions, garlic and tofu, and sauté until the tofu browns. Add the carrots and sauté a few minutes longer. Add the tomatoes, bell pepper, and herbs, along with the salt and pepper if desired. Sauté until heated through, and serve.

Serves two to four.
