Lemon Chip Cookies

Inspired by a recipe in Simply Heavenly! and the need to use up a bag of vegan white chocolate chips before i simply ate them all out of the bag.

Ingredients:

• ¹/₂ cup non-dairy margarine
• ³/₄ cup sucanat or other sugar
• egg replacer for one egg
• juice and zest of one lemon
• 1 tbsp coffee substitute such as krakus or inka
• 1 tsp vanilla extract
• ¹/₂ tsp baking soda
• ¹/₄ tsp salt
• 1 ¹/₂ cups vegan white chocolate chips (see Pangea)
• 1 cup unbleached white flour

Cream together all ingredients but the flour, then add the flour and mix well.

Drop by the spoonful on greased baking sheets. Bake at 375°F until browned but still soft, about 12 minutes.

The cookies will firm up as they cool, thanks to the obscene amount of margarine.

Yields about 30 cookies.
