Curried Potato Salad à la Damon


Ingredients:

Dressing:

Salad:


Boil the potatoes (in skins if possible), cut into 1 inch cubes and set aside to cool.

Combine dressing ingredients and whisk together until smooth.

Finely dice celery and pickles or olives, and grate or finely chop onions (a food processor is great for this!). Combine with cooled potatoes in a large bowl.

Combine dressing and salad ingredients and toss until coated, mixing in salt and pepper to taste.

Allow to chill in the refrigerator for several hours or overnight.

Serves many - probably eight or so as a side dish.
