This is simply a french-fry style snack with a different texture.
Preheat oven to 450°F.
Cut the potatoes into thick wedges lengthwise (about 8 wedges per potato).
In a large pot, add potato wedges and water to cover. Bring to a boil and simmer until potatoes are just tender. DO NOT OVERCOOK - err on the side of undercooking.
Arrange boiled potato wedges on an oven tray and brush lightly with olive oil. Bake, checking frequently after the first 20 minutes, until desired result is achieved - either just browned, or well browned and crispy.
Serve with catsup, mayonnaise substitute, or whatever else you like on chips.
